Creamy Tomato Sauce

Sauté the Aromatics – Heat olive oil in a pan over medium heat. Add the onion and cook until soft and translucent, about 3–4 minutes. Stir in the garlic and cook for another 30 seconds.

Cook the Tomatoes – Add the diced Roma tomatoes. Cook for 5–7 minutes, stirring occasionally, until they soften and begin to break down. Gently mash them with a wooden spoon to release their juices.

Deglaze with Wine – Pour in the white wine and let it simmer for 2–3 minutes, allowing the alcohol to cook off and the flavor to concentrate.

Add Stock & Simmer – Stir in the chicken stock and bring to a gentle simmer. Let it cook for another 5 minutes to meld the flavors.

Blend (Optional) – For a smooth sauce, use an immersion blender or transfer to a blender and pulse until smooth. Leave it chunky if preferred.

Finish with Cream & Seasoning – Lower the heat and stir in the heavy cream, salt, pepper, red pepper flakes, and oregano. Simmer for 2–3 more minutes until it thickens slightly.

Add Cheese & Serve – Stir in Parmesan cheese (if using) until melted. Serve over your favorite pasta and top with fresh basil.

½ cup chicken stock (or more for a thinner sauce)
½ cup heavy cream
½ tsp salt (adjust to taste)
